Sweet Lavender Bake Shoppe!!!

I'm going to take a moment to brag about my friend! My friend Christina started a little bake shop called Sweet Lavender Bake Shoppe from her home not super long ago. She makes the most amazing treats! She and I are a lot alike. I think this past year we both decided(separately) it was time to just take the plunge and start our own little businesses. Its not easy starting out, for either of us. But this gal is quite talented and like me will do anything custom! Check out those Hello Kitty decorations she made below! Send her an email and order something yummy, you won't be disappointed!

vanilla bean marshmallows....need I say more?

So cute, right?

Sweet potato pie!!!

she's wraps things all cute!

Umm....that pie is sugar free! Yummy!

food...yum

I am wondering if I am pregnant again, sometimes all I want to do is eat! I baked some delicious blueberry muffins (above). And some cabbage rolls below. I make them with jasmine rice, lentils and cottage cheese, a little pasta sauce and fresh parmesan cheese on top. Bake for a half hour and try not to eat them all!

Long Time No Blog

I am sorry for not updating this thing in a while. My hubby finally moved up to his new place and started his new job and I am finishing up my classes for this semester. I feel really out of the loop after going back to school after 6 years. Studying for finals is much different this time around. Especially since I have a little one who likes to get into everything I am working on!

So hopefully I am back. I also fixed the comments on this thing. Apparently some of you wanted to comment and it was not working. Hopefully there won't be any more issues with that.

The image above was taken by Marissa Nicole DeMott. Its the wedding cake I made for my father-in-law and his new bride! Not bad for a first cake, but I definitely need to improve! So much fun! It was a vanilla/almond cake with layers of homemade lemon curd on two of the tiers and homemade strawberry jam in the middle tier. It was covered in buttercream icing and topped off with fondant, fondant roses made by me and the hubby, and lace. It took a total of 8 and a half hours to make. Now I know why wedding cakes are so expensive!

tea sandwiches

Egg salad sandwiches were a source of anxiety to my siblings and I when we were young. My sweet mother would pack them for our lunches that we would take to school. After a few hours sitting in a warm locker they turned into what we called "stinky sandwiches." To this day we still call them that. There was nothing worse than a smelly, warm pile of mushy sandwich to greet you and your friends at lunchtime! Ugh...

That being said, I hope that you can trust my judgement in posting on egg salad sandwiches. I wanted something yummy and filling for lunch and thought I'd get creative. To make a perfect egg salad follow these simple instructions:

*leave eggs out til they reach room temperature
*cover them with salted water and bring to a boil.
*time the eggs ten minutes after it reaches a boil
* drain hot water and rinse with cold, fill pot with cold water and ice for a few minutes
*the shells will come right off if you follow these steps

Egg salad primarily consists of mayo, eggs and salt and pepper. Below from the top and clockwise are some other options, use any or all: Parmesan cheese, curry powder, dijon mustard(or spicy brown), black pepper, salt, paprika, the center blob is mayo.

I rarely measure, I season to taste, other great options are fresh parsley, dill, and cayenne pepper. I also like tomato and sometimes some slices of bacon on mine! My sandwich shown was made with honey wheat bread, which is fantastic. Enjoy!

This Cappuccino Fudge Cheesecake from SmittenKitchen.com may get me out of my baking funk. However, it will only complicate my exercise and dieting funk. Visit http://smittenkitchen.com/2009/11/cappuccino-fudge-cheesecake/ for details and recipe!
